carrot chips

there were carrots taking root in my fridge that needed to be used asap. a search brought me to one of my favorite raw recipe sites, gone raw. i've loved every recipe from gone raw, including these crispy carrot chips.


topped with my sister's yummy kalamata olive hummus



if you've got a picky veggie eater in the house, i suggest making chips out of them. (the veggies - not the picky eaters.=) it seems even the most finicky of eaters can't resist a crispy chip!

  8. Kelli, I forgot to ask above...is there any way to do these and some of the other amazing raw recipes without a food processor or vitamix style blender? I don't have either but would love to create these recipes. Thanks for any input. xoxo

    hi alia, that makes me so happy to hear. for the chips, you could buy pre-ground flax seed and use a cheese grater for the carrots. i'm sure they could be baked on low. with the hummus, i imagine a potato masher or even a fork would do the job. perhaps even a standard blender. same with the caponata dressing. my used magic bullet blender that i found on craigslist is one of my most useful appliances, and a food processor that my friend found at a yard sale. put the thoughts out there and the tools will come to you.=)
