ice cream cake ebook giveaway
thank you for the sweet comments on my strawberry banana ice cream cake post. i wish i could share a slice with all of you! what i can do is guide you in making your own and offer a chance to win the ultimate raw ice cream ebook by heather pace.
the bottom layer of this cake is simply frozen banana pureed in the food processor until light and fluffy. after smoothing the banana into a 7-inch springform pan and placing it in the freezer, frozen strawberries with a few squirts agave nectar and lemon juice went in to the food processor next (i didn't bother to rinse it.)
while one layer was freezing, the next was being made. (i was also able to clean up a little and get some laundry done=). dehydrated buckwheat was mixed with maple syrup, cacao nibs and powder for chocolate buckwheat crunchies, and fresh coconut, cashews, macs, coconut butter, vanillla and agave was blended for the vanilla layer. the recipe needs tweaking before posting, though i will share this decadent peanut butter sauce that is the perfect compliment to this cake.
peanut butter sauce
3 T peanut butter (unsweetened and unsalted)
1 T melted coconut oil
1 T water
1/2 tsp vanilla
1 T maple syrup (or liquid sweetener of choice, to taste)
pinch of salt
blend all ingredients until smooth.
kelli's notes: if you use sweetened/salted peanut butter, it may be best to omit the last two ingredients. it's so good, you might want to double or triple the recipe.=)
last year around this time i was an ice cream cake-making machine; once i started, i couldn't stop!
heathy introduced the raw food world to these sensational creations with an ebook and a challenge to create our own. compared to other desserts, i find raw ice cream cakes to be fairly easy to make and insanely fun to create. another plus is they're a bit less expensive because fruit and buckwheat crunchies take the place of pricey nuts/dates often used in raw desserts. (if you grow or pick your own fruit, even better!) and who doesn't enjoy a slice of cool ice cream cake on a warm spring/summer day?!=)
entry #1: rawspberries and cream
entry #2: chocolate strawberries and banana
entry #3: café almond biscotti
final, 2nd place-winning entry: pearberry bliss
heathy's ultimate raw ice cream cake ebook is available for purchase here. enter for a chance to win a copy by leaving a comment below telling me what kind of ice cream cake you'd like to make. for one extra entry: blog, facebook or tweet about this giveaway.
the winner will be selected randomly and announced monday, may 16th, 2011. this giveaway is now closed.

'the soap that grows on trees'
soap nuts review/giveaway
soap nuts review/giveaway
look to the pre-industry days and you will find safe, gentle, and highly-effective cleansers for your home, body, and laundry, like lovely raw soap nuts.
the hypo-allergenic soap nuts are 100% natural, making them safe for babies and those with sensitive skin.
to cleanse, soap nuts contain the all-natural surfactant, saponin (conventional detergents use manufactured chemical surfactants). surfactants work by breaking the surface tension of water, allowing it to more easily penetrate fabrics, effectively making water "wetter". agitation shakes dirt loose and the saponin holds the dirt in suspension until rinsing.
the kind people at maggie's pure land responded promply to my request for a sample to review, and to my delight sent me a box of soap nuts and 32 ounces of liquid soap! i've been using both for a few weeks now and am officially a soap nut!=)
when doing laundry, i just place 5 nuts in the small cotton sack and toss in at the beginning of the cycle. the soap nuts can be reused up to 5 times and composted when spent. for the liquid, i use 2 tablespoons as i would normally. no fabric softener needed! i find both nuts and liquid do an equally amazing job, but the soap nuts are more fun to use.=)
my laundry comes out so nice and clean, just as though i used conventional laundry soap. especially pleasing is how effortlessly the soap nuts removed a watermelon stain from my white cotton skirt and stains from john's white linen pants! my clothes feel so soft, and i love how they smell fresh and odorless - the way clean is supposed to smell!
note: maggie's pure land soap nuts do not produce suds. the bubbles created with conventional soups are not an indicator of cleansing ability. most labaratory cleaners contain foaming agents to "trick" consumers that the product is working. don't be fooled!
in a time of globalization, i feel it's so important to support small businesses and our neighbors. especially when big corporations harm the planet and our health, for profit. (look at me on my soap box, talking about soap nuts!=)
so why not enlighten your load with the soap that grows on trees?=)

the contest will close wednesday, august 11th at 11pm est. the winners will be chosen by a random number generator and announced shortly after. this contest is open to u.s. and canadian residents only.
(maggie's pure land kindly asks the beneficiaries of the samples to post of their soap nut experience to help spread awareness of truly eco-friendly soap!)
soap nuts are the fruit of chinese soapberry trees; relatives of lychee and rambutan. they have been used in china for generations and in europe for decades. in ancient india soap nuts, known in hindi as reetha, were used for body and hair washing, as well as laundering fine fabrics and cleansing precious metals.

other uses for soap nuts include:
- toothpaste
- fruit and vegetable wash (a ten minute soak in a solution of soap nuts removes 95% of surface pesticides and chemical residues)
- hair and body wash
- food-safe cleaner in the kitchen
- in the garden as an insect-repellent
harvesting soap nuts is an environmentally-sustainable practice. as maggie's pure land points out, their factory is a tree! there's no waste, no waste water, and no toxic byproducts. maggie's pure land even uses the nuts and black seeds to make jewelry!

coconut bliss review and a free pint giveaway
the lovely beings at luna and larry's organic coconut bliss sent me three coupons for free pints of their organic coconut-based, animal-friendly ice cream! woohoo!
perfect timing, as ice cream and other cold treats are in order this time of year. it's so uncomfortably hot and humid around my way that even edgar prefers hanging out in the fridge!
john was a big fan of both, especially the vanilla. he loved the way the coconut complimented the vanilla bean. the coconut flavor for me was nice and creamy, but it took away from the classic vanilla bean taste. being the vanilla aficionado that i am, the search remains for the perfect dairy-free vanilla bean ice cream.=)
*what i love about luna and larry's is that their coconut milk comes from an organic family-owned farm in thailand. i also love the story of the company's inception, which you can read here.

edgar says, 'it's gross out!'
*
so john and i picked up a pint of vanilla island (my choice) and chocolate hazelnut fudge (his choice) which was available at our local whole foods. (chocolate peanut butter and cherry amaretto sounded very tempting, as well. next time!=)it is agreed that both flavors are fantastic! i like the chocolate hazelnut fudge better, which is funny because i don't usually care for chocolate ice cream! it's just so perfectly sweet and chocolatey, with a welcoming hint of creamy coconut... and the pools of fudge - divine!

food and freedom
hi chickies! i'm going to try to make this one brief... a hungry little biggles knocked a mug of water onto my laptop trying to wake me up for breakfast. it's in the shop hopefully getting repaired. i'm using johnny's desktop and he's got to use it too, so onto the food!
muth family farm organic csa week two: delicious organic blueberries ($3/pint and from another local farm), green onions, savoy cabbage, amaranth, endive, rainbow chard, cilantro, romaine, kale, zukes, cukes, yellow squash, golden squash, and sunburst squash.
with my greens and new $17 salad spinner, we've been making lots of yummy salads. johnny boy had the brilliant idea to use the blueberries in a vinaigrette. a delight for the taste buds and eyes!=)
blissful blueberry vinaigrette
1/4 C + 2 T blueberries
2 T olive oil
2 T apple cider vinegar (i'm sure red wine and balsamic would also taste nice)
1 T agave or equivalent of your favorite sweetener
process in blender until smooth.
the dressing was made with philip's honey mustard dressing in mind. just four easy to remember ingredients. simple is scrumptious in the summer - i want to enhance the flavor of my fresh ingredients, not overpower them!
below is philip's honey mustard dressing with a tsp of irish moss (above, without). the irish moss added creaminess without changing the flavor.
as you may have heard, i am driving to toronto next weekend to meet up with nelly, heathy and a few other lady bloggers. (yippee!) since i may or may not have a laptop, i am going to pick and announce the winner of the raw food salad bar ebooks before i leave. the deadline for the giveaway is now tuesday, july 6th at midnight. click here to enter if you haven't already!
in the spirit of july 4th, i leave you with a picture of our civil flag of peace blowing in the breeze. it denotes our jurisdiction - common law (or natural law/the creator's law) - as opposed to military/admiralty/commercial law - the law which governs us today. the horizontal-striped, gold-fringed flag signifies a country at war.
the first civil flag came about in 1767 when the "sons of liberty" rebelled against the stamp act by turning the british east india company flag on its side; the vertical stripes representing the people's sovereignty from england. it was the flag of the american revolutionaries.
the founding fathers of this country created documents like the declaration of independence and the bill of rights to preserve, in writing, our god-given birthrights, which intended to free the people from oppressive rule. let us all celebrate the true spirit of 1776 this independence day... with liberty and justice for all.=)

first trip to the organic csa and a spectacular summer giveaway!
keeping with the theme of eating fresh and local, this week was the first of my organic csa share at muth family farm. every wednesday ('til the end of september) i get to fill this basket with local organically-grown goodies. veggie heaven!
week one's loot: kale, rainbow chard, arugula, endive, mizuna, purslane, basil, green onions, romaine, zucchini, yellow squash, sunburst squash, cucumber pickles, bok choy, and savoy cabbage. ALL ORGANIC - WOOHOO!!!=)
the kale will mostly likely be dehydrated into chippies... the chard and purslane used in my smoothies... the greens and cukes will make beautiful salads... the zucchini and squash possibilities are endless... but what was i to do with the savoy cabbage and bok choy? philip's the raw food salad bar had the answer.=)
herb cole slaw
this slaw was so simple, so quick, and so yummy! chop up some cabbage and herbs (i used my favorites - cilantro and basil) and add seasonings - that's it! it was so tasty, i kept going back to the fridge to sample more. the slaw didn't last a day (though i had intended to let it marinate overnight). i'll surely be making this simple slaw again and again! thanks, philip!
mixed bok choy
spicy, sweet, and crunchy - a divine trinity in my book. made and devoured in less then twenty minutes - who knew bok choy was so delicious?=)
have a lookie at philip's ideas for those heirloom tomatoes...
but this book is not limited to summer dishes - it's 115 pages FULL of amazing creations, including sections labeled autumn and winter salads and creamy comfort soups, featuring southern belles in london soup.
