the ultimate raw ice cream cake challenge: rawspberries and cream


i did it! never would i have imagined making an ice cream cake... a raw vegan one at that... but here it is! i named it rawspberries and cream, and it tastes just as good as it looks!


after all the moonie pie fun, there was no way i was missing out on heathy's ultimate raw ice cream cake challenge. making this cake was much easier than i imagined - the hardest part was locating a 6-8" spring form pan!


the cake consists of raspberry ice cream, heathy's vanilla ice cream, heathy's chocolate buckwheat crunchies, raspberry sauce, heathy's whipped cream, and raspberries dipped in heathy's basic dark chocolate.

the timing for this cake creation was perfect - i brought it to a vegan potluck on the hottest day of the year - almost 90°F!

(the plates were my friend linda's. aren't they gorgeous?!)


the best part of making this cake was watching everyone enjoy it. many at the potluck said they haven't had ice cream cake in years.=)

(we got to talking at the potluck and the ladies helped me come up with another delicious idea... so i may have another entry... =)

    And i adore how it matches the plate!! I grew up with a mother and grandmother who had tons of pink and purple dishes...this reminds me of that :)

    The email story you told me. Yikes!

    The potluck...i am so ticked it was soo windy and i couldnt go to ours. Seriously would not have been fun so we skipped it.
