cuckoo for coconuts=)

 

mmm...coconut waterrr...=)
 
my eyes are always peeled for coconuts at the local produce places i frequent. young coconuts are going for $2.99 at whole foods - not bad for a large glass of coconut water and meat for a tasty dessert!


"one groovy coconut" was just a dollar at a local produce junction - (not up to organic standards, but close-by, and once in awhile houses rare gems like groovy coconuts, mannn!)

don from the sunny raw kitchen and raw freedom community taught us how to open a coconut in a civilized manner during his stay.

truthfully, i'm the one who told him to do that. i'm like a 13 year-old girl at times...=)

but i'm also as mature as a coconut (?), making my family homemade milks and desserts.=)

Coconut Cream
(adapted from Sweet Gratitude's Coconut Meringue)

3/4 C coconut milk*
2/3 C coconut meat from one young coconut
2/3 C cashews, soaked about 2 hours
2 T agave
1 1/2 tsp vanilla
1 tsp lemon juice
1/8 tsp salt

blend all in a high speed blender until smooth and creamy, then add:

1 T lecithin
2 T coconut oil or coconut butter

resume blending until fully incorporated. set in fridge until firm, ideally overnight. 

*coconut milk can be made by mixing one part fresh or dried coconut to three parts water. 

coconut cream tastes amazing with granola and pairs so smoothly with chocolate cream.

Chocolate Cream
(serves 1-2)

one ripe large avocado
1/4 C agave
2 T water
1/2 tsp vanilla
pinch salt
1 T coconut oil, melted
5 heaping T cacao powder

in a high speed blender, blend first five ingredients well. add remaining ingredients, and continue to blend until smooth. chill for a few hours before serving. 

john describes the above like SAD chocolate pudding with whipped cream, but better!=)

  4. i've been completely cukoo for coconuts lately too. love all your creams. i really like the meringue from sweet gratitude.

    what do you use the mature coconuts for? the milk?

    mrs. bigglesworth loves coconut oil? i will have to have my kittie sample some. foucault loves peanut butter and avocado, so it wouldn't be too much of a stretch.

    bitt - yup, we drank the water, then made coconut milk. we also nibbled on the fresh meat. it was pretty tasty!

    sweet gratitude's meringue is delicious, but i need a high speed blender for the irish moss in the recipe. someday...!

  7. Mmm I love coconuts, too :) When I'm home in the Philippines, they're cheap and plentiful. The thought of having some within the month helps me get through the winter days ;)
